Ryusei, the flagship brand of Fujii Shuzou in Takehara, Hiroshima, won top honors at Japan's very first national sake competition held in 1907, then earned a Sake Trophy at the International Wine Challenge in London in 2007, marking a century of acclaimed brewing. After temporarily retiring the name post-World War II due to difficulty maintaining quality, the brewery revived Ryusei in 1989 and today brews it exclusively as junmai sake using the traditional kimoto method, guided by the motto that 'sake is not the work of man, but the work of nature.' The flavor profile balances a mild fragrance with mellow sweetness, lively acidity, and a clean finish built for food.
