Houju is produced by Fujii Shuzou, a brewery founded in 1863 in Takehara, Hiroshima Prefecture, that transitioned entirely to the kimoto brewing method in 2023, embracing the labor-intensive traditional technique across its full lineup. The brewery is also known for the Ryusei brand and took the highest gold award in the junmai ginjo and daiginjo division at the IWC in 2007. Houju, including the Retro Label expression, draws on Hiroshima's soft-water brewing heritage and the house's deep commitment to hand-crafted fermentation.
