Kankobai

Kankobai is produced by Kankobai Shuzo, founded in 1854 in Tsu, Mie Prefecture, whose name evokes the cold red plum that blooms as a herald of spring — a symbol of the clean, beautiful sake the brewery aspires to make. Operating at roughly 250 koku per year with all processes done by hand, the brewery overhauled its entire approach in 2010, earning recognition at the SAKE Competition and selection by JAL for its international first-class service in 2016, with the lineup built around Yamada Nishiki polished across multiple precision tiers.
