Yamanakashuzoten has been brewing in Joso City, Ibaraki Prefecture since 1805, drawing water from the Kinugawa river basin on the Kanto plain. The name Hitorimusume -- only daughter -- was chosen to convey the care and devotion put into each batch, as if raising a beloved child, and the brand received the top prize at a national competition in 1944. In recent decades Hitorimusume has earned gold medals at the IWSC and Monde Selection, and the brewery's two-stage pressing method produces a dry, clear style long associated with Ibaraki regional sake.
