Azumaryu
Toshun Syuzo was founded in 1865 in Nagoya City, Aichi Prefecture, and the Azumaryu brand takes its name from the Azure Dragon, a guardian deity of the east, as well as from the brewery's founder Tobei Sato. For over 150 years the brewery has crafted sake using the Yamahai method, a traditional yeast starter technique that produces sake with a rich body, crisp finish, and layered flavor built from indigenous lactic acid bacteria. The brewery grinds its own rice for sake production and uses high-quality local ingredients from nearby agricultural regions.
