Senbon Nishiki rice polished to 40% defines this daiginjo from Hiroshima's Saijo brewing district, using a variety developed by crossing Yamada Nishiki with a locally suited Hiroshima rice. Senbon Nishiki sake won gold at the All-Japan New Sake Competition for nine consecutive years through 2019.
