Kimoto 99 layers Tsuchida Shuzo's traditional kimoto starter with a near-total koji ratio of 99%, combining two of the brewery's most extreme techniques in a single junmai. The result is a dense, layered sake with caramel-like richness, complex acidity, and the bold, untamed character that defines Tsuchida's natural brewing philosophy.
