Description

Gohyakumangoku rice polished to 65% and fermented using the all-kimoto method, relying entirely on ambient lactic acid bacteria rather than commercially added lactic acid. The kimoto process at Tsuchida Shuzo takes twice as long as modern methods, building layers of sourness, umami, and a clean, extended finish.
