Kame no O, the heritage Meiji-era rice variety, is polished to 80% and bottled after a single bottle-warming fire treatment (binhiire) as a junmai genshu. The brewery's philosophy of low-polish brewing coaxes the grain's depth and umami forward without sacrificing refinement.
