熊本9號酵母獨特的香氣、日本酒的甘甜,以及釀造用水所帶來的"綿滑"質感,在和水町的自然中達到了平衡而共鳴的境界。受麴菌等微生物影響而產生的前所未有的新鮮感,在口中留下了難以忘懷的餘韻。山田錦自2015年起在菊池川流域的日本水地區與數十戶農家合作栽培,目前約占12%的農田。能在擁有2000年稻作文化歷史的這片土地上種植山田錦,是令人深感自豪的事。
