麴米使用山田錦，掛米使用西都之雫和山田錦。西都之雫是山口縣原創酒米，以酒藏所在地下關市山間地區為主產地的本地米，由「穀良都」與西海222號（以山田錦為親本之一）雜交培育而成。以清新溫和的香氣與順滑柔和的甜酸，追求與餐食相伴的日本酒風格。

長州酒造承接了下關市菊川町老字號酒藏玉田酒造的事業，重新出發釀造清酒。新創品牌「天美」之名取自日本古神「天照大神」一詞中的一字，寓意陽光哺育稻穀之意。酒藏相信「小差異成就大不同」，精心積累每一個細微工序，希望無論愛酒之人還是初次接觸日本酒的人，都能傳遞那份令人心曠神怡的感動，並釀造出無論喜悅還是悲傷都能慰藉內心的清酒。
