Dewasansan, a Yamagata-born sake rice variety derived from Miyamanishiki, is polished to 50% for this hi-ire (pasteurized) junmai ginjo from Sugiisami Warabioka Shuzo in Yuza, Yamagata. Single pasteurization stabilizes the sake while retaining the fruity, softly dry character typical of Dewasansan. Mt. Chokai subterranean water, classified as medium-soft, contributes to the clean, unforced mouthfeel.
