Jokigen Namachozoshu Soujun is a junmai ginjo from Kano Shuzo in Ishikawa Prefecture brewed using the namachozo storage method, which involves aging the sake unpasteurized before a single pasteurization at bottling. The technique combines the vitality of raw sake with the developed flavor of matured ginjo from Ishikawa's Kaga brewing region.
