釀造日本酒時需要經過精米這一工序。常規純米酒的精米步合為60%(米糠40%),大吟釀則為40%(米糠60%)。一般來說,精米程度越高,口感越為清爽,但本系列也挑戰以低精米率釀酒。通過降低精米率,可以更充分地感受到大米本身的鮮味。這款「純米渡船」適合搭配濃郁風味的料理(如奶油類菜餚等),是一款可與法式料理等多種風格廣泛搭配的餐中酒。此酒使用的酒米是明治時代培育的品種,曾因栽培困難於昭和30年代一度廢止,後在縣農業試驗場被重新發現,是從極少數種子中復活的夢幻酒米。在山田錦的母系品系中,滋賀正推動打造品牌大米的行動。這款酒以軟米特有的溫和風味與清爽酸味為特點。
