使用京都誕生的新酵母「京之戀」。釀酒用米以清酒釀造適合米「祝」為主,用於京都產純米酒的全量。釋放酵母的活力,釀造出最佳的酒。四段式釀製與生酒特有的米香甜味、長期超低溫發酵所帶來的清爽香氣,以及清新感完美融合。以無過濾方式釀製,根據裝瓶時機,有時米的成分可能殘留在瓶內。這是一款生酒,活躍酵母的生命力直接傳遞至舌尖。※這是與京都市產業技術研究所共同開發的新純米酒。

松井酒造株式會社創立於享保十一年(1726年),酒藏坐落於東山三十六峰與鴨川之間,附近有京都御所、下鴨神社及比叡山等名勝環繞,自然環境得天獨厚。因地下工程影響而長期停產後,酒藏於2009年復興,多名釀酒師共同投入釀造。酒藏不追求強烈香氣或辛辣,而是最大限度呈現米的甜酸「米之旨味」,以松尾大社日本酒大賽冠軍的實力,釀製醇厚美味的佳釀。
