Kame no O, an heirloom rice variety once considered the grandfather of modern sake rice, is brewed using the sanhai-jikomi (three-stage mashing) method in this junmai ginjo from Zuikan in Hiroshima. Kame no O imparts a refined, composed drinkability with a clean, elegant aftertaste and a savory nuance distinct from modern crossbred varieties. The brewery cultivates its own Kame no O rice in collaboration with local farming groups.
