這是成為花場原點的熟成酒。2005BY(平成17BY)以山廢方式首次釀造了無酵母酒。如今所有酒均不添加酵母,但這款酒是始終想要傳承的味道。山廢製法的發酵以及能感受到力量感的酸,詮釋了「發酵=防腐劑」這一側面,是將「熟成」這一酒的變化視為助力的花場釀酒理念的原點,也是不可或缺的要素。由於琺瑯槽不進行溫度管理,發酵強度會隨各釀造年度的氣候及仕込み時期而變化。發酵越強,保存性越高,所需的熟成期間越長;反之,發酵越弱,酸味越溫和柔順,所需期間越短。也就是說,奈良吉野的釀造年度與仕込み期間……
