Yamada Nishiki forms the foundation of this namagenshu junmai ginjo from Uehara Shuzo in Shiga, brewed without pasteurization or dilution and pressed using the brewery's famed kioke tenbin (wooden-vat balance) method — a technique retained by fewer than six breweries in Japan.
