Kaze no Mori ALPHA 8 employs an original Amorphous process in which Akitsuho brown rice is roasted rather than steamed, breaking down starches without polishing and retaining the full character of the grain. Fermented with No. 7 yeast and bodaimoto, the sake carries notes of Kyoho grape and ripe apple, full-bodied sweetness, pleasant bitterness, and a complexity that has no direct parallel in conventional sake.
