Echigo Denemon was established in Niigata in the mid-twentieth century and in 2021 passed to Koki Kato, a sixth-generation sake retailer from Tokyo who took over as sole brewer and brewmaster to pursue a new vision of Niigata sake. Denemon aims to move beyond the region's conventional light, dry profile, building sake with mid-palate weight and three-dimensional texture before finishing with acidity that clears the way for the next bite, and a deliberate touch of astringency in the finish. The brewery's stated mission is to brew a prosperous society and to operate as a world-facing nano-brewery producing high-quality sake entirely by hand.
