Otemon Daiginjo uses Miyama Nishiki polished to 45% from Suzuki Shuzo in Saitama. The high polish of Miyama Nishiki to near-half the original grain size draws out the delicate, refined ginjo aromatics suited to this elevated expression from the Kanto region.
