Junmai hiyaoroshi from Gohyakumangoku rice polished to 55%, cold-matured through summer and released as a single-pasteurized autumn sake at Yumegokoro Shuzo in Kitakata, Fukushima. Extended aging rounds the flavor into a mellowed, fruit-tinged umami with banana-like notes and a smooth, satisfying finish.
