Aizu-grown rice polished to 60% is brewed with Utsukushima Dream yeast and Iide Mountain spring water to produce this junmai. The brewery's emphasis on rice umami over aromatic flamboyance results in a sake suited to food, equally enjoyable chilled or gently warmed. Unfiltered bottling preserves the grain's inherent character without charcoal stripping.
