Junmai Ginjo nakadare (middle-run extraction) from Gohyakumangoku rice polished to 53% at Yumegokoro Shuzo in Kitakata, Fukushima. Drawing only the most balanced portion of the press using Utsukushima Dream yeast and Iide mountain water produces a clean, concentrated flavor with a fine, elegant finish.
