The brewery, founded in 1871 in Hamamatsu, Shizuoka, uses Shizuoka-native yeast and the prefecture's own Homarefuji rice to produce a clean, food-friendly junmai. The Shussejo brand name references Hamamatsu Castle, where early Tokugawa rule was established before the unification of Japan.
