Tentakaku Junmai Ginjo Namazumegenshu translates to 'soaring high,' an evocative name for an undiluted (genshu), namazume (bottled unpasteurized, stored pasteurized once) junmai ginjo from Hamamatsu Shuzo in Shizuoka. The namazume method applies one pasteurization at bottling rather than at the tank, preserving more of the fresh yeast-driven aromatics than a fully pasteurized sake. Brewed with Shizuoka yeast and local rice at the Tenjingura brewery founded in 1871, it delivers the concentrated richness of genshu with a bright, fragrant character.
