Ginjo from Yoyogiku Jozo in Joetsu, Niigata, brewed with Koshi Tanrei rice polished to 50% and drawn from ultra-soft spring water flowing from the slopes of sacred Mt. Yoneyama. Pressed using the traditional fune wooden-frame method, which applies gentle pressure to yield a clean, richly textured pour.
