Echigonokuramoto Chibitagawa
Yoyogiku Jozo was established during the Tenmei period (1781-1789) of the Edo era in Joetsu City, Niigata Prefecture, and brews the Chibitagawa brand using spring water drawn from the Chibitagawa source on the brewery grounds, also growing rice in its own fields. The Chibitagawa spring produces ultra-soft water that slows fermentation and contributes to a soft, well-rounded character in the sake. The brand's Echigonokuramoto Chibitagawa name connects directly to this water source, positioning the sake as an expression of the specific natural resources of the Joetsu region.
