Ginjo from Sudo Honke in Kimitsu, Chiba, brewed with Yamada Nishiki and the brewery's certified deep-aquifer water from 500 meters underground. Sudo Honke ferments all its sake using cold-weather slow fermentation and produces an unfiltered junmai daiginjo-oriented lineup that has won recognition at international competitions. Specific polishing ratio for this ginjo is not publicly disclosed.
