Description

Tobindori (drip-collection) namasake is the unfiltered, unpasteurized, free-run top expression of Sudo Honke's Amanohara Daiginjo line. Drip collection yields only the most delicate fraction of the fermentation, resulting in heightened aromatic intensity. The brewery uses water drawn from 500 meters below ground and Yamada Nishiki polished to 40%.
