Amabuki Junmaiginjo Omachi Nadesiko Yeast Nama pairs two elements the brewery is particularly known for: Omachi, one of Japan's oldest surviving sake rice varieties with an earthy, mineral depth, and yeast isolated from pink nadeshiko (carnation) flowers. Amabuki Shuzo in Saga pioneered the use of flower yeasts over two decades ago, and nadeshiko yeast imparts aromatic notes reminiscent of wild berries and fresh florals. This namazake is released unpasteurized to preserve the brightness of both the rice and the bloom-derived fermentation.
