Amabuki I LOVE SUSHI Karakuchi Junmaishu Namazake - Junmai sake from Amabuki Shuzo Co., Saga
Description

Amabuki I LOVE SUSHI Karakuchi Junmaishu Namazake is a dry, food-forward junmai designed specifically to complement the clean, oceanic flavors of sushi and seafood. Brewed at Amabuki Shuzo in Saga using flower-derived yeasts and rice grown on the Saga plain through chemical-free aigamo farming, the unpasteurized namazake format preserves a bright, lively texture that contrasts well against rich umami notes. The label's playful declaration reflects the brewery's commitment to building sakes around specific dining contexts.

Hard to imagine from the cute label, but this was the driest, crispest sake I’ve ever had. Exactly my kind of taste. Honestly, this sharp dryness might pair better with sushi than a richer, more aromatic style. A sake you can keep drinking all through the meal.
