Ooseto rice polished to 55% forms this tokubetsu junmai from Sekaiitto in Wakayama, a pasteurized version of the label also available as muroka namagenshu. Ooseto contributes a crisp, dry character with faint ginjo-like fragrance and a firm, clean acidic finish.
