This junmai uses Hinohikari rice at 60% polishing and is brewed by Soukou Shuzo in Oita City, the prefecture's sole city-based sake brewery. The brewery, which has won awards including gold at the U.S. National Sake Appraisal for its special junmai Soju, applies Kumamoto active yeast across its pure rice lineup.
