Brewed from Oita-grown Hinohikari rice polished to 60%, this junmai is produced by Soukou Shuzo, Oita City's only sake brewery. Hinohikari is a rice variety prized in western Japan for its balanced character, and the brewery applies Kumamoto active yeast to draw out its rice-forward qualities.
