Kenichiro Ichido Hiire (一度火入れ) is a single-pasteurized Junmai Ginjo from Chiyonohikari Shuzo in Myoko City, Niigata, using Koshi Tanrei polished to 50%. This single-pass heat treatment balances stability with near-namazake freshness, from a brewery whose 1860 founding marks over 165 years of Niigata snow-country brewing.
