Kaganoi Josen Honjozo is polished to 60% and brewed with the medium-hard water unique to Itoigawa, giving it the firmer structure and longer umami finish that distinguishes the brewery from the broader Niigata softwater style. Clean and food-friendly, it drinks well both chilled and at room temperature.
