
Kaganoi Hiyauma Honjozo is a cold-stored honjozo from Itoigawa's Kaganoi Sake Brewery, polished to 60%, allowed to rest through summer and released in autumn with a rounded, mellow character. The hiyaoroshi treatment softens the raw edges of the original brew, resulting in balanced umami and a smooth finish shaped by the brewery's medium-hard water.
