Sogga Pere Et Fils is the sake label of Obuse Winery in Nagano, created as a winter project by the Soga family winemakers when vineyard work pauses, applying Burgundy-informed sensibilities to natural sake brewing. Using only Nagano-grown Miyamanishiki rice with native brewery yeast, no added lactic acid, and traditional kimoto methods, the range produces sake with wine-like acidity and a restrained, organic character entirely unlike mainstream Japanese styles.
