Senryootokoyama is produced by Hishiya Shuzou (also known as Hishiya Shuzoten), a brewery located in Miyako City by the coast of Iwate Prefecture in the Tohoku region. The brewery resumed sake brewing relatively quickly after sustaining damage in the 2011 Tohoku earthquake, supported by sake lovers across Japan, and has since been recognized for its skills inherited from master brewer Katsutoshi Tsujimura, designated a Modern Master Craftsman. The Senryootokoyama sake is noted for a silky, honey-like texture with clean acidity and umami that gives it a robust yet approachable character.
