Kyoka is one of the labels produced by Fukumitsuya Sake Brewery, which has been brewing in Kanazawa, Ishikawa Prefecture, since 1625, making it the city's oldest sake brewery. Fukumitsuya converted entirely to junmai sake in 2001, meaning every product in its lineup, including Kyoka, is brewed with rice, koji, and water alone, using spring water that the brewery describes as having taken over 100 years to filter underground before reaching the premises.
