Izumiryukoshinohakusetsu

Yahiko Shuzo, founded in 1838 in Niigata Prefecture, is the entrusted brewer of holy sake for Echigo Ichinomiya Yahiko Shrine, one of the region's most venerated Shinto sites. In 1848, the founder developed the Izumi-ryu Sake Brewing Method, named after the spring waters at the foot of Mount Yahiko, which produced sake that was 'pale in color, light in taste, and of long-lasting quality.' Izumiryukoshinohakusetsu represents this proprietary tradition, brewed with rice and yeast sourced entirely from Yahiko, including a revived sake rice and a yeast isolated from the native Yahiko cherry tree.
