Founded in 1838 in Nishikanbara, Niigata, Yahiko Shuzo traces its lineage to the first-generation brewmaster who established the Izumiryu brewing style, and the school's disciples went on to lead breweries across Japan, earning the brewery the title master brewery. Using only the soft spring water flowing from Mount Yahiko and locally grown rice varieties including Yamada Nishiki and Aidantare, the entire production is hand-crafted and cold-season only.
