Dewasansan is the sake brand of Wada Shuzo, established in 1797 in Kahoku Town, Yamagata Prefecture, a brewery that traces its roots to a family trading house dealing in rice and safflower before dedicating itself fully to sake production. The brewery draws on snowmelt water from Mt. Gassan and locally harvested rice, maintaining handcrafted small-batch methods across generations, and their Dewasansan junmai daiginjo received a Bronze Medal at the IWC 2018 SAKE competition and the highest gold award at the Wine Glass Delicious Sake Awards in 2016. The brand name references the Dewasansan rice variety, a Yamagata-original developed over nearly two decades to embody the clean, elegant ginjo style the prefecture has championed since the 1980s.
