Wada Shuzo, founded in 1797 in the mountain village of Yachi at the heart of Yamagata Prefecture, is among the oldest breweries still operating in Japan. The brewery draws brewing water directly from the snowmelt of the Gassan mountains, delivering a naturally soft, fresh character to its sake. Kairyoshinko takes its name from a prized Yamagata heritage rice variety once considered the only grain suitable for sake brewing in the region, and the dry, clean junmai style it produces has earned gold medals at the Annual Japan Sake Awards.
