Yamahai Tokubetsu Junmai Omachi Jikagumi from KK Ookurahonke in Nara is a direct-press tokubetsu junmai using Omachi rice and the yamahai brewing method, collected immediately from the press tank without blending. Omachi's earthy richness and the lactic depth of yamahai fermentation are captured in their most unaltered state through jikagumi bottling. This sake represents a direct and honest expression of one of Nara's most traditional brewing approaches.
