Gohyakumangoku rice and the ultra-soft water of the Oku-Daisen beech forest at 800 meters elevation in Tottori define this Shuho Iwaizumi Kasen. The brewery, founded in Meiji 10 in Kofu-cho, has carried traditional hand-crafted methods through more than 140 years.
