Description

Brewed in a small batch with local yeast and bottled from a single tank, this unfiltered, tank strength junmai shows notes of tart yogurt, mushroom, and earthy honey. Its yamahai method lends acidity well suited to rich, spiced dishes. Made from Gohyakumangoku rice in Fukui, it reaches an ABV of 16.5 percent with an SMV of +3.5.
