以真庭、濑户、高岛三个产地为题,推出「雄町三部曲——产地」,每块田地各酿一款。在统一精米方式、酵母等基本规格的同时,坚守「不刻意追求,顺势而为」的酿造理念。不人为控制温度与发酵天数,而是将发酵交托给米的潜力。通过将土壤孕育的产地特性融入发酵,能更深刻地感受到米本身的个性与差异。雄町高岛:安政六年(1859年),旧高岛村有町的勤农岸本甚三发现了两株稻穗,由此开启了首次酿造。这一酒米的稀有特质逐渐传遍全国各地酒藏,栽培地也因此被称为「雄町」。这一历史事实,可谓日本酿酒史上的重要转折点。我们在雄町的发祥之地,满怀深深的敬意,精心酿造此酒。
