Taikan Shuzo was founded in 1877 in Minami-Alps City, Yamanashi Prefecture, drawing subterranean water from the Southern Alps and using locally grown rice to craft crisp, dry sake designed to complement food. While preserving over 140 years of tradition, the brewery has also explored innovation, releasing a sparkling sake fermented with wine yeast and bottle-conditioned for a light, banana-tinged effervescence.
